Pan-fried Scallops with Lime

As these little gems are so quick & easy to cook, have everything else ready prepared – side salad or pasta – whatever you choose!


  • 6-8 scallops
  • 1 tbsp olive oil & a little butter
  • 2 large garlic cloves, finely chopped
  • Half a red chilli, chopped
  • Juice of half a lime
  • Roughly chopped coriander
  • Salt and pepper

(Serves 2 as a starter)


Pat the scallops dry with paper towel then lightly season with salt & pepper.

Fry them over a medium heat in the olive oil & butter for about 1-2 mins until golden, turn them over and sprinkle with the chopped garlic and chopped fresh red chilli.

Cook for about 1-2 mins more, decorate with a sprinkling of chopped coriander & serve with a wedge of lime to squeeze over them & tuck in!
